RV Recipe: Stuffed Pepper Casserole

Stuffed Pepper Casserole

Ingredients

  • 2 green peppers
  • 1 lb. ground beef
  • 1/2 onion diced
  • 3 tbsp. olive oil
  • 1 tbsp. minced garlic
  • 1 can diced tomatoes
  • 2 c. spaghetti sauce
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/2 tbsp. seasoned salt
  • 1 tsp. pepper
  • 1 tsp. chili powder
  • 1 c. mushrooms
  • 1 tsp. garlic salt
  • 2 c. rice
  • 2 c. shredded mozzarella cheese

Instructions

  1. Preheat oven to 350 degrees.
  2. Wash and dry all your produce.
  3. Rinse your rice at least 3 times or until the water runs clear.
  4. Dice the peppers and onion. Chop the mushrooms into fourths, and mince the garlic.
  5. Heat a drizzle of oil in a pot over medium heat.
  6. When the oil is hot enough to pop when flicked with water, add the beef.
  7. While the beef is cooking, cook the rice according to package instructions.
  8. Brown the meat until it’s just cooked through, breaking it up as you cook it.
  9. Add in the peppers and onions, allowing to simmer until they have just softened.
  10. Stir in the garlic, tomatoes, spaghetti sauce, garlic powder, salt, seasoned salt, pepper, chili powder, mushrooms, and garlic salt.
  11. Bring to a boil and then simmer for five minutes.
  12. Remove from the heat and stir in the rice and 1 c. of cheese.
  13. Grease a 9″x12″ baking dish and dump in the mixture.
  14. Bake for 30 minutes in the oven and then add the remaining cheese to the top.
  15. Return to the oven for 5 minutes, and serve hot!
